Poached Egg and Sliced Avocado on Toast

1 egg
2 tablespoons of white wine vinegar
2 avocados (make sure they’re ripe!)
2 slices of Wholemeal
1 tbsp olive oil
1 lime
6 cherry tomatoes
Sprinkle of parsley

This recipe is packed with goodness that will keep you riding for longer. Avocados are a great source of monosaturated fats, which help your body absorb more vitamins from your food, whilst each egg will provide around 6g of good quality protein.
